Raw cabbage is packed with vitamin C, nutrients, fibers and antioxidants.
I am making this cabbage salad very often and we eat several days from it. It is always a fresh and super healthy side dish which fits to everything.

Here is the recipe:

Salad:

2 onions
4 garlic cloves
100 grams of nut mix
30 grams of raisins
1 bunch of parsley
1/2 bunch of cilantro
Topping of your choice

Cut the cabbage in small slices or use a food processor to cut it in pieces.
Add the onions and the garlic (finely chopped)
Cut the nuts and the raisins in a food processor.
Finely chop the parsley and the cilantro.

Mix everything together and top with what you like. I topped the salad with sprouted mung beans, a bit of curcuma and lemon quarters. Pomegranate seeds work really well too and they add a touch of color.

Dressing:

Juice of 1 lemon
1 tsp of maple syrup
1 tbsp of apple vinegar
6 tbsp of olive oil
1 tsp of Dijon Mustard
