Comforting Mung dal

Mung dal is a real soul food dish I make whenever I feel a bit down or out of energy. I use to make a big pot and freeze portions of it for future meals.
Here is the recipe1 liter vegetable stock
400 gr mung beans
100 gr lentils
1 tbsp cumin
1 tbsp curcuma
1.5 tbsp ground cilantro
1 tbsp cardamom
chili powder if you like
4 big onions
half a red pepper
8 garlic pieces
3cm of ginger (grated or in small pieces)
4 carrots cut in small pieces
2 sticks of celery cut in small pieces
salt and pepper
fresh cilantro
100 gr spinach
2 lime

Fry the onions and garlic with the spices in olive oil or ghee.

Bring the vegetable stock to boil and and add the mung beans and lentils.
Add the rest of the vegetables and the onion/spices mix to the cooking mung beans. Add some water if needed.
Add the spinach and the onion juice at the end.

Serve with fresh cilantro and onion quarters on the table.
