Let’s make a Galette des Rois (Cake of the kings), but then the sugar free, gluten free version. You find Galette des rois everywhere in France, only during the month of January.
Gluten and dairy free Galette des rois recipe
Ingredients:
2 gluten free puff pastry
2 organic eggs + 1 for the glazing
150 gr almond meal
40 gr coconut sugar
50 ml maple syrup
110 gr vegan butter or desodorised coconut oil
1/2 tsp almond extract
Workflow:
1. Put one puff pastry on a flat oven form.
2. Melt the vegan butter and mix all the ingredients together with a big spoon. Apply the mix on one of the puff pastries and leave the edges empty.
3. Close on top with the second puff pastry layer and close well on the edges.
4. Apply the egg yolk on the outer layer (optional).
5. Bake at 180 degrees Celsius in the oven for 35 minutes until it is goldish brown.
