Healthy salad dressing with probiotics

For me a salad 'rises or falls' with the dressing, in terms of health and taste :) Often dressings contain sugar or low quality oils and a too sour vinegar. All together, these kind of dressings acidify the body and can do more harm than good.

I am a big fan of apple cider vinegar. It is highly beneficial for the health, full of nutrients, probiotics and helps balance the insulin level. And I also love Tahini and Dijon mustard. So my dressing actually combines most of my favourite condiments in one. Here is the recipe.

Ingredients:

1 big teaspoon of Dijon mustard
1 big teaspoon Tahini
2 1 tbsp organic unfiltered Apple cider vinegar
3 tbsp olive oil
1 tbsp rapeseed oil or linseed oil (omega 3 and 6)
1/2 tsp organic honey
1 tsp lemon juice

Mix and enjoy.

Ps. I always put the dressing next to the salad bowl on the table so that people can serve themselves salad + dressing directly on their plate to avoid food waste. If we have a leftover of salad, it stays crunchy kept in a tupperware in the fridge.
