Vegan Apple Crisp with Vanilla and Walnut Ice cream

Whenever I have fruit that is not looking so good anymore I either use it for smoothies or I like to make a quick gluten free crisp. A scoop of vegan sugar free vanilla & walnut ice cream on it and voilà, such a wonderful treat for after dinner ♡. That's what I love most about wholesome cooking. I never have to throw away food and I can eat the most indulging foods without any bad side effects ;) So here is the recipe for both the apple crisp and the vegan ice cream for which you don't even need an ice cream maker.

Gluten free Vegan Apple Crisp

8 apples (or whatever fruit you have)
1 lemon
1 tsp ground cinnamon
1 tbsp coconut sugar

Topping:
120 grams gluten free oats
120 grams 5 tbsp coconut oil or butter for non-vegans
60 grams rice flour
60 grams almond meal
1tsp ground cinnamon
1 tbsp coconut sugar
1 tbsp maple syrup
1/2 tsp salt

Mix the cut apples with the cinnamon, coconut sugar and the lemon juice and pour it in an oven form.

Preheat oven at 180 degrees Celsius. Mix all the topping ingredients together with the hands until you get sticky clumbs.

Pour over the apples and bake for 45 minutes until the crisp is goldish brown.

Vegan vanilla & walnut ice cream

1 can (400 ml) coconut milk
2 tbsp almond butter
1 vanilla pod
1 tsp vanilla extract
40 ml maple syrup or more
40 gr walnuts chopped
chocolate chips (optional)

Mix all together and put in the freezer for at least 6 hours. Take out and it defrost a little for 15 minutes before serving.
